So, many, many, many moons ago, I had this pork dish that my ex boyfriend's mother brought home from a party.

He was Filipino and it was, I'm assuming, a Filipino dish.

Big piece of pork loin. Pinkish kind of soupy sauce. Whole green chillies, like cuban. Light green.

Is this a big pork loin version of binagoongan? It was honestly the best pork dish I have ever tasted in my life and the flavour memory has lasted the entire time I've been alive since eating the manifestation of heaven that was this dish.

Can any Filipino DLers comment on this?

The sauce was only slightly tart so I'm assuming there was an acidic element like tomato or one of the many vinegars that are utilized for Filipino cuisine.

Honestly it sounds more like pork with salsa verde (tomatillos and chilis) but the pink color is throwing me off too (because salsa verde would be a thin soupy sauce, vs a thick one) - Maybe someone made a salsa verde and then added some tomatoes at the end which changed the color to pinkish?

Yeah, I think it’s binagoongan, too. At first, I thought it might be pinakbet, which has a pink sauce made of fermented shrimp. But that dish usually has a lot of vegetables (eggplant, okra, squash, bitter melon) which you didn’t mention.
